
When most people think of sparkling wine, their minds usually go straight to Champagne in France or perhaps Prosecco. But Spain has been quietly producing outstanding sparkling wines for more than a century, often at a fraction of the price. That wine is Cava.
If you’ve ever enjoyed a glass of Spanish sparkling wine at a celebration, there’s a good chance it was Cava. What many wine lovers don’t realize, however, is that while Cava can technically be produced in several regions across Spain, its true heart lies in one place: the rolling vineyards of Penedès, just southwest of Barcelona.
A Spanish Sparkling Wine with Champagne Roots
One of the things that makes Cava so fascinating is that it is produced using the same technique as Champagne: the Traditional Method, in which the second fermentation happens inside the bottle. This process creates the fine bubbles and complex flavors that sparkling wine lovers enjoy.
The story begins in the late 1800s when Spanish producers in Penedès looked north to Champagne for inspiration. By combining that traditional winemaking technique with Spain’s own native grape varieties, they created a sparkling wine that was both distinctive and delicious.
The Grapes Behind the Bubbles
While Champagne relies on grapes like Chardonnay and Pinot Noir, Cava has its own trio of classic varieties:
- Macabeo, which often contributes fresh fruit and floral aromas
- Xarel·lo, which provides structure, body, and aging potential
- Parellada, which adds elegance and bright acidity
Together, these grapes create wines that are refreshing, lively, and wonderfully food-friendly.
Depending on the producer and style, you might notice flavors of green apple, citrus, pear, almond, or even a hint of brioche from time spent aging on the lees.
