Champagne Before Champagne

Long before Champagne became known for the world’s most famous sparkling wine, bubbles were already rising in Limoux, a small town in southern France. In 1531, monks at the Abbey of Saint-Hilaire recorded the production of a naturally sparkling wine—nearly a century before Dom Pérignon’s work in Champagne.

That wine was Blanquette de Limoux, and Saint-Hilaire continues to honor this remarkable legacy today.

Unlike Champagne, Blanquette de Limoux is made primarily from Mauzac, a local grape known for its crisp apple character. Saint-Hilaire’s Brut Blanquette typically blends Mauzac with a small quantity of Chardonnay and Chenin Blanc, which helps create a bit of structure while still showcasing its distinctive regional identity.

In the glass, the wine shows a pale lemon color with lively bubbles. Aromas of green apple, pear, citrus, and white flowers lead into a dry, refreshing palate with bright acidity, subtle creaminess, and a clean, light almond finish. It’s energetic, elegant, and unmistakably different from Champagne.

The first Thursday of each month, up to 8 people get together to enjoy each other’s company as we taste wine focused on a particular varietal, wine style or wine region. February is focused on the wines of Spain. There’s no fee to participate in these gatherings. Each month is hosted by a different person who is only responsible for providing glasses and a festive tasting atmosphere. Each participant brings a bottle of wine and a paired snack to share that fits the month’s theme.
